2 cups short pasta (penne, farfalle, rigatoni, macaroni, etc.)
cooked slightly less than al dente
2/3 cup whole milk
1/3 cup grated cheddar jack cheese
5 ounces Velveeta
3 ounces white cheddar cheese
1/8 teaspoon onion powder
1/8 teaspoon chili powder
1/8 teaspoon garlic salt
1/16 teaspoon pepper
10 Cheez-it or goldfish crackers
8 Ritz or club crackers
2 bacon strips, chopped
freshly grated parmesan cheese
Add milk, Velveeta, cheddar jack and white cheddar cheese to a medium saucepan and cook over medium low heat; stir until melted and blended.
Add the onion powder, chili powder, salt and pepper. Stir until smooth and fully combined.
Add cooked pasta to baking dish, pour cheese sauce over top. Mix well. Top with another handful of shredded cheese. Crush crackers in baggie. Chop bacon and sprinkle bacon and crushed crackers on top of pasta and cheese. Sprinkle freshly grated parmesan cheese over top.
Cover pan with aluminum foil and bake at 450° for 10 minutes.
Remove foil and bake 5 minutes longer, or until top is beginning to brown and pasta is heated through.
