Zucchini Bread

1 cup flour
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon baking soda
1/8 teaspoon baking powder
1 egg, beaten
1/3 cup sugar
1/3 cup brown sugar
1/3 cup vegetable oil
1 teaspoon vanilla
¾ cup grated zucchini
Turbinado sugar, for sprinkling on top of loaves
Mix flour, cinnamon, salt, baking soda and baking powder together. Use a whisk to combine and set aside.
Beat egg, sugar, brown sugar, vegetable oil and vanilla. Slowly add dry ingredients to egg mixture. Blend in grated zucchini.
Grease and flour two mini loaf pans (6” x 3”).
Pour half of the batter in to each pan. Sprinkle tops of loaves with turbinado sugar.
Bake at 400 degrees F for 25-30 minutes.
***for chocolate zucchini loaf, add 1 ½ tablespoons cocoa powder and 2 tablespoons mini chocolate chips
