Zucchini Bread

1 cup flour

1 teaspoon cinnamon

½ teaspoon salt

½ teaspoon baking soda

1/8 teaspoon baking powder

1 egg, beaten

1/3 cup sugar

1/3 cup brown sugar

1/3 cup vegetable oil

1 teaspoon vanilla

¾ cup grated zucchini

Turbinado sugar, for sprinkling on top of loaves

  • Mix flour, cinnamon, salt, baking soda and baking powder together.  Use a whisk to combine and set aside.

  • Beat egg, sugar, brown sugar, vegetable oil and vanilla.  Slowly add dry ingredients to egg mixture.  Blend in grated zucchini.

  • Grease and flour two mini loaf pans (6” x 3”).

  • Pour half of the batter in to each pan.  Sprinkle tops of loaves with turbinado sugar. 

  • Bake at 400 degrees F for 25-30 minutes.

***for chocolate zucchini loaf, add 1 ½ tablespoons cocoa powder and 2 tablespoons mini chocolate chips
